Wahoo! Another Blackwater Recipe – From Catch to the Kitchen

Well, as most of you have already gathered, we here at Blackwater are very blessed to be headquartered in beautiful Southern California, and along with the great weather comes some really great catches!!  We were lucky enough to have Seaforth Landing’s very own Mr. Yamate who was fresh off an 18 day trip bring us some fine catches he roped in using our very own Blackwater Fluorocarbon and Braid combination!

Which led us to this great blog… Therefore, I guess for the math minded –  the equation could go a little something like this!!

Since Mr. Yamate was nice enough to drop off such an abundance of fish, we were distraught as to what should be our next great recipe.  After a few quick moments, our in-house chef here at Blackwater knew exactly what would wet our culinary appetites.   Not only that, but also help a lot of you readers out there with a very delectable recipe for a fish that some struggle with when thinking of tasty dishes.. This fish of course being, Wahoo!

Our chef today will instruct all of us on how to create a perfect spring recipe, Wahoo Fish Salad.

You will need the following:

(1)  Wahoo

(1)  Mayo

(1)  Dijon Mustard

(1)  Celery

(1)  Red Onion

(1)  Kosher Pickles

(1)  Fresh Parsley

(1)  Curry Powder

(1)  Garlic Salt

(1)  Lemon Pepper

(1)  Black Pepper

(1)  Brioche Bread

(1)  Sharp Cheddar Cheese

(1)  Tomatoes

(1)  Avocados

(1)  Lemon Juice

(1)  Whole Wheat Flower Tortillas *optional

Step One:  Generously season your wahoo fillets with lemon pepper & garlic salt seasoning.  Our chef recommends lemon pepper & garlic salt seasoning because it enhances the flavor of the fish.  See pics below.

Step Two:  Its time to light up the grill!  Make sure your pre-heated grill has been well sprayed with Pam cooking spray to alleviate any sticking to the grill once the fillet’s are done.  Place the fillets on the grill and proceed to let the grill do the work.  Grill each side for approx.  3 – 5 minutes or until thoroughly cooked through the center.  See pics below.

Step Three:  Time to prepare your salad!  Finely cut up all of the veggies including the pickles, parsley, onion, celery, etc…  Put them into a good size mixing bowl.    At the same time, slice up tomatoes, avocados, and cheese thinly and place to the side.   See pics below.

Step Four:  Once the wahoo has been grilled, it will need to be cooled..  Once cooled, proceed to shred up the wahoo and add to your salad mixture.  See pics below.

Step Five:  Start stirring!  Once your items are nicely stirred together, proceed to add a generous amount of:  mayo, dijon mustard, garlic salt, curry powder (a little goes a long way!), & black pepper.  Continue to stir the items until the salad has reached a good consistency.  If you are finding the salad to be a tad on the dry side… Well, add more MAYO!  See pics below.

Step Six:  Time to put it together!  Break out the Brioche bread and lather up the slices with mayo, then proceed to add the salad mix, tomatoes, avocado, and cheese to one side of the bread.  Feel free to add your own favorite sandwich toppings at this point!   You can also follow these same steps to create a delicious wrap!  See pics below.

Finally you should be ready to eat!  Our chef also came up with another cool way of enjoying this salad and thats in a wrap form.  Simply follow all the same steps to create the salad, but instead of using Brioche bread, use whole wheat tortillas instead!  Perfect for a day time snack!!
